Stir Fried Lima beans | Sem Phali ki Sabzi

Lima beans or sem phali is usually served as a side dish, like other green beans these are rich in fiber and other nutrients. Lima beans are firm in texture hence proper cooking requires time, to overcome this step I have microwaved lima beans in this stir fry.
Ingredients required and detailed instructions for the recipe are as follows:

Ingredients for Stir Fried Lima Beans:

Lima beans: 250gms
Tomatoes-2(chopped)
Garlic – 15-20 pods
Green chillies- 4-5
Ginger-1”piece
Salt-to taste
Coriander powder-1 tablespoon
Garam masala powder- ¼ teaspoon
cumin seeds-1 teaspoon
oil-1 tablespoon
lemon-1

Method:


  1. Clean lima beans by removing their side threads with knife and chop them .
  2. li> Peel and crush garlic pods

  3. Wash lema beans, place them in a microsafe container, sprinkle some salt over them, micro high them for 4 minutes.
  4. Heat oil in a pan add crushed garlic as it turns pinkish in color, add cumin seeds roast till they crackle, add tomatoes, lima beans along with salt and turmeric powder, cook for 3-4 minutes on low flame, stir once, at this stage you can cover the lid of pan.
  5. Add green chillies, ginger and remaining spices, mix well cook for another 2 minutes,

    Just before serviing add lemon juice to it, Lima beans are ready to serve.

Notes:

If you are not microwaving beans, cooking time will be increased at this step you have to cook till they are soft.
You can also made lima beans with potatoes

Radish stir fry is a healthy seasonal vegetable, it is served as a side dish and can be prepared within 10 minutes., radish roundels are stir fried along with its leaves some basic spices are used in this stir fry, it is seasoned with lemonjuice. In north india it is commonly known as mooli ki bhujia. Radish stir fry goes well with dal and rice, some people like it with kadhi chawal, you can have this with any gravy dish. I prefer to cook it in Lunch.
Ingredients required and detailed instructions for the recipe are as follows

Preparation Time : 5 minutes | Cooking Time : 8 minutes | Serves :2

Ingredients:

Radish -1
Radish leaves-1 cup
Green chillies-2
Black mustard seeds-1/2 teaspoon
Turmeric powder-1/4 teaspoon
Salt-to taste
cumin seeds-1/4 teaspoon
Fenugreek seeds-1/4 teaspoon
Mustard Oil-2 teaspoon

Method:


Peel radish and cut it into roundels.
Roughly chop radish leaves along with their soft stems.
Soak it in salted water for 5 minutes, wash it thoroughly under running water

In a pan heat oil, add cumin,fenugreek seeds,green chilies and mustard seeds as they crackle add chopped radish along with turmeric powder and salt mix well.

Cook it on high flame for 3-4 minutes, you can see radish has released all its moisture, simmer the flame and let it cook for another 5-6 minutes, at this stage you can cover the lid, check radish if there is moisture content in it, let it dry on high flame.
Radish stir fry is ready, just before serving squeeze lemon juice over it

Notes:

Radish leaves and stems give a nice crunch to this side dish and are healthy too, you can also make this recipe without these if you don’t like slightly bitter taste of these.
It is prepared with mustard oil, you can prepare it with any vegetable oil.

Green leafy vegetables are always good for health. Amaranth leaves popularly known as chaulai or cholai are rich in Iron, One should try to consume it when it is easily available in season. It is cooked in form of sabzi or in combination with moong dal. It’s iron content increases when it is prepared in iron skillet.
In this recipe I am going to stir fry amaranth leaves , you can prepare them with potatoes too. Other green leafy vegetable recipe of my blog is arbi patta rolls and sia thoom ja phulka. You can also try some stir fry vegetables like point gourd potato stir fry, beans potato stir fry. Ingredients required and detailed instructions for the recipe are as follows:

Ingredients:

Amaranth leaves – 350gms
Garlic pods -15-20(peeled and crushed)
Cumin seeds- 1 teaspoon
Green chillies-4-6
Salt- to taste
Turmeric powder- ½ teaspoon
Lemon juice – 1 teaspoon
Oil- 1 tablespoon

Instructions: 

 clean amaranth leaves, remove hard stems, chop them finely.
Soak them in water with one teaspoon salt for 5 minutes.
Remove the leaves from top, you will see lots of impurities in the bottom of bowl. Wash leaves 2-3 times thoroughly under the running water.
Heat oil in kadhai.
Add crushed garlic pods, roast them for a minute, add cumin seeds, as they crackle add amaranth leaves.
Add salt and turmeric powder to it mix well, cook for 3-4 minutes on high flame, cover the lid and cook for another 4-5 minutes, if there is water content in it, cook on high flame till water evaporates. If preparing in Iron skillet or kadhai leave it in kadhai for 15-20 minutes.
Just before serving add lemon juice to it. Serve with chapatti or paratha.

Notes:

 Amaranth leaves are more thick than spinach hence take more time for cooking.Preparing any vegetable in Iron skillet increase its Iron content and color is slightly darken to normal pan cooking.
Vitamin C is required for proper absorption of iron in body hence lemon juice is added.
If preparing in Iron skillet don’t leave it in iron skillet for more than 30 minutes, otherwise its taste may change.
