Wishing you very happy Gurupurab to all my readers. Wheat flour halwa is must for this occasion, this is a simple Indian dessert recipe, you can make it any time of day with easily available ingredients at home. This is quick and easy to cook delicious and healthy sweet with goodness of wheat flour and ghee. Ingredients:

Wheat flour- 1 cup
Ghee-3/4 cup
Water-2 and ½ cups
Sugar-3/4 cup
Cardamom-2

Method:

In a bowl mix sugar with water.
Heat half quantity of ghee in a pan, add cardamoms roast for 1 minute, and mix wheat flour to it stirring continuously roast on medium to high flame for 4 to 5 minutes.
Wheat flour's color starts changing to brown adjust the flame to low.

Stirring continuously roast for another 5 minutes.

Add sugar syrup to the roasted wheat flour, mix it well, mash all the lumps in wheat flour

After stirring it for one minute, you will see whole water has been absorbed, at this stage add the remaining ghee, mix well, cover the lid and cook for only 1 minute.

Notes:

Need not to heat sugar and water mixture, before adding it to wheat flour mix it well.
After adding water you have to continuously stir it .
You can garnish halwa with dry fruits.
Coarse ground wheat flour is ideal for making halwa.

Sesame Rice Balls

Sesame rice balls is a deep fried dessert recipe. Earlier preparations are required for this recipe. The secret behind its perfection lies in making right dough for this and sufficient skill in deep frying the balls. After 2-3 trials you will be able to make this perfectly. Usually this recipe is prepared with rice flour, but I am making it with soaked and further grinded rice. I found its texture was better than prepared with rice flour, hence this recipe includes whole rice in it. Ingredients required and detailed instructions for the recipe are as follows:

Ingredients
Rice- 1 and ½ cups
Sugar- ½ cup
Sesame seeds or white til- 1 tablespoon
Milk-1/2 cup
Baking soda or sodium bicarbonate- 2 pinches

Instructions: Wash and soak rice in plenty of water.

Change the water wash them again once.
Pour them on a strainer so that extra water drains out.
Place rice in a grinding jar, add milk and sugar with it, grind it to fine paste.>

Check rice by pressing it with fingers if small particles of rice are seen grind it again for 2-3 minutes.
Transfer this mixture in a bowl, add sesame seeds to it( preserve 1 teaspoon seeds for further process)
Mix well for 3-4 minutes , mixture will become light and fluffy.
Now add baking soda to it, mix once.
Cover the mixture and place it in fridge for 6-8 hours.
After 8 hours you will see that mixture is thick enough, you can easily make balls of it .
Make small sized balls of it, heat sufficient oil in a pan or kadhai.
Sprinkle sesame seeds over the prepared balls, take one ball and slightly shape it in between your palms, so that sprinkled sesame seeds stick to it properly.
Prepare all the balls in the same manner.
Deep fry 5-6 balls at a time on medium to low heat as they starts browning from bottom, turn them and let them fry from another side.
Fry all the balls in the same manner, serve hot.
Notes: Adding milk and baking soda makes the ball soft and creamy inside.
You can easily make the balls with rice flour too, but placing batter in fridge for 6-8 hours is must for good texture and taste.
Deep frying them from medium to low flame will helps in cooking them properly, frying on high flame will change the color but they will remained uncooked inside.

Mango Ice Cream Recipe

Mango Ice cream is all time and all age group favorite recipe. When fresh mangoes are in season I prepared it twice or some time thrice week in summers. Easy to prepare recipe with only five ingredients. Ingredients required and detailed instructions for the recipe are as follows:

Ingredients
Mangoes-2
Milk-1/2 litre
Cream or malai-1/2 cup
Vanilla Flavored custard powder-2 tablespoon
Sugar 2 table spoon
Instructions
Take ½ cup of milk and dissolve custard powder in it.
Peel and chop mangoes, and then grind them to puree.
Boil milk on high flame, as it starts boiling, simmer the flame, stirring continuously boil it for 5-7 minutes, add sugar to it.
Add dissolved custard powder along with milk, stirring continuously boil till it thickens.
Add cream to it, mix well switch off the flame.
After 5 minutes, add mango puree to it, mix well. Let it cool , place ice cream mixture in an air tight container. Place it in freezer for 3-4 hours.
Remove the container from freezer, after a minute or 2, with the help of hand blender, blend the mixture thoroughly.
Place it in freezer again, do the blending process for minimum 3 times, this will help remove ice flakes from mango ice cream.

After last blending when ice cream is set, scoop it and serve.
Notes: I use a lock N lock container for setting ice cream, it is airtight and blending is easy in it. You don’t have to shift mixture again and again in blending jar.
You can serve it with the topping of rose syrup or chocolate sauce.
