Gram Flour Crepes

Gram flour Crepes

Gram flour Crepes is a quick and easy to prepare breakfast recipe which doesn’t require any preparations, these goes well with the cup of tea or you can have these with chutney too. Adding chopped onions is optional but it give these crepes a crunchy texture. Now coming to the recipe, ingredients required and detailed instructions for the recipe are as follows:

Ingredients:

gram flour-1 cup
green chillies-2
coriander leaves-2tablespoon(chopped)
salt-to taste
garam masla powder-1/2 teaspoon
water-1 cup
oil -1 tablespoon(for shallow frying)

Method:

  1. chop coriander leaves and green chillies
  2. in a mixing bowl add gram flour, salt, coriander leaves , green chillies and garam masala powder, mix well
  3. Make a batter of pouring consistency by gradually adding water in it.
  4. Heat gridle and apply one teaspoon oil over it, spread it properly, pour a ladleful of batter over it, with the help of spoon, spread it in circular motion

  5. pour few drops of oil on the side and top of the crepe, when batter starts firming, with the help of spatula turn it and cook it from another side for 2 minutes on low flame , till it is cooked properly and golden in color.
  6. Serve immediately with a cup of tea

Notes:

For pouring consistency you can adjust the amount of water according to your requirement.
Crepes should be cooked on low flalme.

Poha

Poha

Poha is a quick and easy snack recipe made with flattened rice. In north India it is served as a breakfast with jalebi. With slight variations in ingredients it is cooked in different forms like: kanda poha, batata poha, lemon poha , matar poha and tamarind poha. It can be prepared as dessert with addition of sugar or jaggary and milk.
Poha is healthy and easy to digest, it doesn’t require any preparations hence you can cook it within minutes. Today I am sharing you my simple recipe of poha made with onions, ingredients require and detailed instructions for the recipe are as follows:

Ingredients:

Poha or flattened rice- 2 cups
Onion- 1 big
Green chillies-4
Curry leaves-10-12
Mustard seeds-1/2 teaspoon
Red chillipowder-1/4 teaspoo
Turmeric powder-1/2 teaspoon
Salt- to taste Lemon-1
Dalmoth, sev or anyother mixture-1 tablespoon Oil-1 tablespoon
Sugar-optional

Method:

  1. Take poha in a vegetable strainer, wash it thoroughly under running water
  2. Sprinkle turmeric powder over washed poha mix well
  3. Keep aside for 5 minutes

  4. Chop onion and green chillies
  5. Heat oil in a pan or kadhai, add mustard seeds as they splutter, add chopped onion, green chilies and curry leaves, roast till onions are light pinkish in color.
  6. Add red chili powder , salt and soaked poha mix well, stirring continuously cook for 2 minutes
  7. Garnish it with dalmoth, sugar and lemon juice, serve hot

Notes: Thick poha goes well for this recipe.
I prefer to garnish it with mixture as it includes peanuts, chana dal and sev which gives it a crunch.
Adding sugar is optional, with lemon juice sugar gives it sweet and sour taste.
It is difficult to warm poha, you can do this in microwave or place pan or kadhai in which you cooked poha over a pan in which water is already boiling. It helps poha to keep warm.

Tomato Onion Uttapam Recipe

Tomato Onion Uttapam is a quick and easy breakfast recipe prepared without any extra preparations. This can be served simply with tomato sauce and anyother chutney of your choice, you can serve it with sambhar too. I usually prefer to cook it on non stick tawa for ease, it can be cooked on normal tawa too with proper greasing. Ingredients required and detailed instructions for the recipe are as follows:
Ingredients
Sooji or semolina- 1 cup
Curd-1/2 cup
Green chillies-2-3
Tomatoes-2(only skins)
Onion-1
Oil-for shallow frying
Curry leaves-8-10
Salt-to taste
Water-1/4 cup
Instructions:


Dice tomato skins, chop onions, green chillies and curry leaves.
Beat curd with water, add sooji to it mix well remove all lumps.
Add salt, chopped green chillies, curry leaves and half portion of onions.
Leave it for 5-6 minutes, check the mixture, if required add more water it should be of pouring consistency.
Heat non stick tawa, apply few drops of oil to it, adjust the flame to low, pour 1 tablespoon of mixture over it and spread immediately.sprinkle some diced tomatoes and onions over it, pour few drops of oil over the uttapam and from sides,slightly press the veggies with the help of spatula.
Check if it is golden brown from lower side, with the help of spatula and supporting with knife
turn the uttapam.
Cook for another 1 or 1 and ½ minutes, onion and tomato pieces will be cooked slightly and their crunch will remain. Prepare uttapams from remaining batter.
Serve hot with sauce or chutney of your choice.

Baddhi Moong Dal, Puri : Sindhi Breakfast

Baddhi Moong Dal , Puri is a sindhi breakfast, you are familier with aloo puri, chholey puri but this combination is very popular among sindhis .

 Simple and delicious, easy to cook and no extra  preparations are needed, if you have soaked yellow moong dal earlier, it will hardly take 15 minutes for you to ready with your breakfast. Ingredients required for the recipe are as follows:
For Puri: 2 cups of wheat flour.
cumin seeds : 1/2 teaspoon
red chilli powder: 1/2 teaspoon
salt : to taste
garam masala powder: 1/2 teaspoon
kasoori methi: 1 teaspoon
water: for kneading the dough.
Oil : for frying.
 For daal
moong dal : 1 cup
turmeric powder: 1/4 teaspoon
salt to taste
ginger grated : 1 " piece
green chillies: 4 Nos.
Seasoning(tampering):
Let me inform you one thing that in normal daal we heat oil , mix jeera rai etc, after cooking it for seconds, mix it in dal but in this recipe, raw spices are sprinkled over the daal and than hot oil is poured over it, this gives  a unique taste to the recipe.
Oil :  1-2 teaspoon for each katori daal
 red chilli powder, amchur powder, coriander powder, roasted cumin powder - all these ingredients are required as tadka has to given on each katori , hence you can sprinkle these ingredients according to your taste.
Method:
  • Mix  all the ingredients of puri except oil  & water, knead stiff dough with the help of water, keep aside.
  •  wash soaked moong dal,  ( if you are not in a hurry and ready to spend some time for cooking I suggest you to boil  dal in a heavy bottomed vessel (in sindhis we call it Sipri) you will feel & understand the difference of taste , try it for once). If you are using pressure cooker take dal, add salt, ginger, green chillies, turmeric powder and two cups of water boil till one whistle. In a pan you have to check in between  till dal is cooked and water is absorbed. Consistency of dal should be thick but you can adjust according to your taste.
  • heat oil in a kadhai , roll out puris and fry them .
  • pour dal in a bowl or katori, sprinkle red chilli powder, amchur powder, coriander powder & roasted cumin powder to it, pour 1-2 teaspoons of hot oil over it. 
  • serve hot with papad and pickle of your choice.

Bread Pakoda

Bread pakoda is a fried snack, easy to prepare at any time with easily available ingredients at home. It is my favorite evening snack with a cup of hot tea.

Ingredients required for this recipe are:
Bread slices: 5(make 10 pieces)
Besan: 1 cup
Green chillies: 3-4(finely chopped)
Dry mint Powder: 1 table spoon (you can use fresh coriander/ methi (fenugreek leaves)
Red chilli powder: ½ teaspoon
Water: for making dough
Salt : to taste
Oil: for deep frying
Method: cut the hard brown edges of bread. Cut each piece into two, you can also cut in triangular shape.
In a bowl add besan, greenchillies, salt, redchilli powder and dry mint powder, mix well gradually adding water with spoon and mixing make a thick dough of batter. Whisk well to avoid any lumps.
Heat oil in kadhai, take a piece of bread , dip it into the batter, with the help of big serving spoon, coat the batter on every side of bread, (now take carefully you can take big flat serving spoon) and fry pakoda in hot oil, first the flame should be high, as it start changing color slow the flame to medium, fry from both sides, till crisp and golden brown in color.
Serve with chutney of your choice

KOKI

Koki is a sindhi breakfast bread, healthy option to start your day.You can have this at any meal course, like evening snack with tea or as a lunch or dinner with jeera tamatar me aloo ,curd or pickle. You can add coriander leaves, mint/methi leaves(fresh or dried) green garlic stems subject to the availability in season, you can add edible oil, ghee, butter or malai.

Ingredients required for this recipe are:
Wheat flour: 2 cups
Oil : 2 table spoon for mixing in dough & extra for shallow frying kokis
Onion: 1 chopped
Green chillies: 4
Pepper corns 8-10
salt : to taste
Chopped coriander leaves-2 tablespoon
Water: as required for kneading a stiff dough
Garam masala powder: ¼ teaspoon
Anardana (pomegranate): 1 teaspoon
Method:
Dry roast pomegranate and peppercorns on tawa, crush them with green chillies, place them in a bowl, mix flour, onion,salt, refined oil, chopped coriander leaves and garam masala powder, mix well with hands it will form crumb like consistency, now gradually adding water make a stiff dough. Let is rest for 10 minutes. Divide the dough in equal portions(may be 3-4) , roll them, koki is rolled thick in comparision to normal roti, prick it with fork on both sides, on a hot griddle on medium heat, shallow fry kokis with minimum oil, when it is cooked completely and golden brown in color from both side, serve hot with accompainment of your choice.
