SAWAN PHOTAN JA SAMOSA | GREEN GARBANZO BEANS SAMOSA

Sawan Photan Ja Samosa

Happy Holi to All of You, This is my Mom's recipe, she cooks it on every Holi, it is must in her Holi menu, apart from all dishes, on the proper holi day I hardly get time to go at my parent's place, though we prepare Gujias togather on a day before holika dahan, so  this year I decided to make boot chaney key samosey this name is popular in local language.Recipe is easy , hope you will like this.
Ingredients required and detail instructions for the recipe are shown below:

Ingredients:For covering:
Refined Flour Maida: 1 and ½ cup
Ajwain- ¼ teaspoon
Salt- to taste
Refined oil- 1 tablespoon
Oil extra- for frying
For stuffing:
Boiled potatoes: 4-5
sawa phota or Green garbanzo beans: 1 cup (one kg will extract 1 cup beans)
Saunf- 1teaspoon
Coriander leaves- 1 tablespoon
Garam masala powder: ½ teaspoon
Amchur powder – 1 teaspoon
chilli> powder ¼ teaspoon
Green chillies- 2 chopped
Ginger grated- 1 teaspoon
Method :
Mix salt one tablespoon flour and ajwainto maidarub properly as it attains the crumb like with the help of water knead stiff dough. Cover it with wet muslin cloth for 10 minutes. Boil , peel and finely chop potatoes, add ginger, green
chillies coriander leaves, salt amchur powder, garam masala and redchilli
powder to it, mix well slightly mash few potatoes.
Heatone teaspoon oil in a pan, add as it crackles add sawan photan and salt mix well simmer the flame , cover the lid and cook for 4-5 minutes, check beans if they are tender hence cook them for a minute or two, now add potato mixture to it. Mix well and on a high flame, stirring continuously cook till they are roasted properly and light pinkish in color.
Remove it from the pan and let it cool completely.Add garam masala powder to it
Take one ball of maida roll out thin chapatti, make cut marks in half chapati as shown in the pic with the help of knife.
Gently cover the cut marked pattern with flat portion of chapatti, this will make ½ chappati. Press the edges with your fingers, so that both parts are sticked properly.
Deep fry them on medium to low heat till golden brown in color

KHURAK: SINDHI RECIPE

Khurak is a sindhi sweet recipe, basically it is a dry fruits and wheat flour fudge, prepared in winter season.
From the childhood days, we are enjoying this recipe, For a long time I wanted to post this on my blog, and here is the time to share this with all of you.

Ingredients required for this recipe are:
wheat flour: 1/2 kg
mix dryfruits: 1/2 kg (dry coconut grated, almonds, cashewnuts, raisins, muskmelon seeds : (25gms)poppy seeds: (25 gms)
sugar: 600gms
refined oil or ghee: 350gm ( it is needed more than this but i use less, you can also take 50:50 ratio of ghee and oil)
edible gum: 1/4 cup
water:  200ml
green cardamom : 15 - 20 (powdered)
Preparations:
fry gum or microwave them on turntable on high for 40-50 seconds they will pop up depending upon the power levels of your microwave. Grind them to fine powder , and pass it through strainer. preserve  powder of it
Mix sugar and water boil it till one string consistency.
Grind all the dry fruits (except poppy seeds , grated coconut and muskmelon seeds they are to be added later, ) you can either powder them or coarsely grind them if you like the chunks. I preferred coarse grinding.
Grease 2 or 3 three thalis with oil for setting the khurak

Method:
Heat oil in a heavy bottomed pan , be sure to take the big one,(i would suggest you if you are trying for first time just take half measures of all ingredients and then try, they will be plenty) as it has to contain all the ingredients.
Add cardamom powder and wheat flour to it,( if you find that it is difficult to stir the mixture you can add some ghee at this time, if you are easy than its ok.,)  on a medium heat roast wheat flour continuously stirring till it is golden in color this will take approx 20-25 minutes or more( you have to be patient while roasting , ). Add poppy  muskmelon seeds and  grated coconut and roast again for just 3-4 minutes, add dry fruits powder, gum powder mix well and stir once, simmer the flame, carefully add sugar syrup to it, at this stage temperature of mixture is very high so it can splutter, mix well till it starts to leave the sides of pan.
Quickly pour it on greased thalis, flatten it with the help of spatula, after 5 minutes with the help of knife make marks on it. Let is cool completely as it sets. Finally cut the pieces and store in a container.

Tomato & Beetroot soup

Tomato &  Beetroot Soup is one of the easiest soup recipe I use to prepare. It is easy because it doesn't need any preparations and with the help of available ingredients you can make it in very short time.

Ingredients require for this recipe are as follows
Tomatoes: 8-10 medium size.
beetroot : 1 big
garlic: 8-10 cloves
ginger 1"piece
green coriander roots with some stems: 1/2 cup (usually we through it but  they are very rich in Vitamins, folic acid and other nutrients, wash them properly and use them , this also gives a nice aroma to soup)
salt: to taste
pepper powder: for garnishing
coriander leaves : for garnishing
bread slices: 2 (substitution of corn flour)
Method:
  • crush ginger and garlic
  • break bread into pieces
  • wash coriander roots
  • roughly chop tomatoes and beet root.
  • place them all in pressure cooker with 1 glass of water
  • cook on a high flame till 3 whistles
  • let is cool completely
  • open the lid and remove all the coriander roots
  • with the help of hand blender, blend  till smooth puree
  • pass it through soup strainer
  • again boil it for 3-4 minutes, add salt
  • garnish it with pepper powder and coriander leaves
  • you can have a teaspoon of butter over it

Gur Ka Paratha

Gur or jaggery is warm in nature and is healthy to have it in winter season. Gur can be used in various ways in our meal but for daily intake of it , paratha is one of the easiest option for me. Grated jaggery is stuffed in paratha, you can use a pinch of ajwain, saunf powder or grated almonds with jaggery, use only one ingredient at a time.Detailed procedure of the recipe is as follows:

Refined oil:  1 tablespoon
Kneaded dough for 4 paraths(normal chapati dough)
grated jaggery 2 tablespoon(1/2 is needed for each paratha)
1/2 teaspoon ajwain( or saunf powder or almonds)
Method:
step by step instructions for making jaggery or gur ka paratha, indian flat bread recipe
Roll out normal chapati, spread grated jaggery on 1/2 of the paratha, sprinke a pinch of ajwain on it, fold it in half circle. Press gently with your fingers to seal the edges. With the help of fork make a design on it, securing  the edges  will prevent jagery syrup to come out. Heat tawa on high flame, simmer the flame and cook from both sides till golden brown.

RAW MANGO CHUTNEY

Raw mango chutney should be made fresh when required , retains it goodness, color and flavours. I am posting recipe of raw mango chutney , simple recipe doesn't require any cooking.

Ingredients:
Raw mangoes: 4 Nos.
coriander leaves : 1 Bunch
mint leaves : a handfull
green chillies: 4 Nos.
Onion: 1 big size
cumin seeds: 1 teaspoon
Salt :as per taste

Procedure:
  • Peel raw mangoes, discard seeds and chopp them roughly
  • clean coriander and mint leaves
  • peel onion and make slices
  • mix all the ingredients (except cumin seeds and salt) wash throughly.
  • in a grinding jar grind all the ingredints with cumin seeds to a fine paste, add salt according to your taste.

KULFI

indian ice cream recipe served with vermicelli
home made kulfi is good option in summer. when you need soothing cool flavours . I am posting my shortcut version of kulfi (made with mishrambu badam shorbet or thandai)
Ingredients:
For Sev
  • arrarout : 2 tablespoons
  • water : 1 cup
  • edible orange color: 3-4 drops
  • iced water : 1/2 litre
For almond crunch :
almonds: 12-15
sugar : 2 tablespoon
For kulfi:
amul full cream milk: 1/2 litres
everyday diarywhitener : 50 gms(to be dissolved in luke warm milk)
cornstarch: 1 tablespoon( to be dissolve in water)
mishrambu : 3 tablespoons( as this syrup is honey based hence sugar is not required but you can add as per your taste)
elaichi powder: 1/4 teaspoon
dry rose petals:  2teaspoons
sugar powder: if required(as per your taste)
Procedure:
For sev: dissolve ararout with water in a pan, add color, put on a medium  flame stirring constantly till the mixture is thicken and cooked, it will look transparent. when it is warm enough to handle with your hands. pass it through kitchen press and get the sev in  iced water.
for almond crunch:  get a greased plate ready, chop almonds roughly in 3-4 pieces each,  dissolve sugar in a pan on very low flame till it changes its color , nicely coat all the almond pieces with sugar and pour them in a greased plate let it cool completely, the process is same as we follow to prepare chikki. when it it set properly crush it in small pieces.
For Kulfi:
  • boil milk in a heave bottomed pan with cardamom powder, reduce the flame stir occasionally till it is reduced in volume and yellowish /pale in color.
  • mix dairy whitener and corn starch to the boiling milk and stirr regularly till mixture thickens, this will take about 5-6 minutes
  • let the mixture cool completely add rose pattels and mishrambu powder, and almond crunch to it.
  • check the sweetness of the mixture , add sugarpowder if desired as per taste.
  • pour the mixture in an airtight container and freeze it in refrigator for 5-6 hours/ till it sets.
for serving:
  • Demould kulfi, cut it into pieces cover it with sev.
Suggestion: you can pour one teaspoon of rooh afza syrup on it for a change of taste.
In order to avoid ice flakes in home made kulfi the mixture should be thick enough for setting, you can freeze the mixture in refrigrator when it is half set (approx 2 hours) blend it in a blender and than freeze it again, this will  prevent ice flakes to devlop.

BRINJAL FRY

recipe of fried eggplant serves as a side dish
 I like tala hua baigan with dal chawal , this is a simple recipe served as a side dish with easily avialable ingredients
Ingredients:
Big size round brinjals: 2
garam masala powder: 1/4 teaspoon
red chilli powder: 1/2 teaspoon
corianderpowder : 2 tablespoon
salt: as per taste
turmeric powder: 1/4 teaspoon
dry mangopowder: 1/2 teaspoon
crushed kasoori methi: 1/2 teaspoon
oil : for shallowfrying
Method
  • heat oil in a wide frying pan
  • cut brinjal in thin roundles, making cross marks on both sides with knife

  • spread slices and shallow fry them till golden brown on both sides.
  • check that brinjal is tender and well cooked.
  • simmer the flame, mix all the masala powders in a small bowl.
  • sprinkle masala powder evenly on top side of slices and turn the slices, cover both sides with masala, cook them on both sides
  • serve as a side dish.

KATHAL SABJI

Kathal(jackfruit) is my all time favourite, cooked in various ways, today I am writing the recipe of an easy version of kathal.
Ingredients:
Kathal : 250 gms
oninons: large size three
green chillies: 4
garlic pods: 10-12 crushed
ginger: 1" piece
tomatoes: 4 no.s large size
salt as per taste
turmeric powder 1/4 teaspoon
red chillipowder : 1/2 teaspoon
coriander powder: 3 tablespoon
everest : meat masala powder 2 teaspoon
oil : for frying
oil : 1 and 1/2 tablespoon
water: 1 tablespoon

Method:
  • cut kathal in medium size pieces, deep fry them
  • Grind onion and garlic in grinder just for few seconds, this will crush them
  • grind ginger, chilli and tomatoes to fine paste
  • in a pressure cooker heat 1 and a 1/2 tablespoon of oil roast onions till golden brown , add redchillipowder and tomato paste, roast for few seconds
  • add rest of the spices and simmer the flame
  • add fackfruit pieces mix well , roast for 5-7 minutes on low flame till oil seprates
  • add one tablespoon of water, cover the lid and cook till 2 whistles

dish is ready serve with roti and salad.
